🛒 Ingredients Required:
Chicken: 1 kg
Onions: 300–350 gm (chopped)
Masala Mix: 4.5 tablespoons (50g) of Masalakootu Biriyani Masala
Oil: 2 tablespoons coconut oil
Liquid: 1 glass of water
Fresh Aromatics: Curry leaves
Biriyani Rice: Quantity as needed
Seasoning: Salt, as needed
👩🍳 Cooking Instructions:
Prepare Base: In a pan, heat 2 tablespoons of coconut oil. Sauté the chopped onion (300-350 gm), salt, and curry leaves until the onions are thoroughly cooked and translucent.
Bloom Masala: Add 4.5 tablespoons (50g) of the Biriyani Masala to the onion mixture and cook thoroughly for about 1 minute to bloom the spices.
Cook Chicken: Add the 1 kg of chicken and mix thoroughly to coat. Add 1 glass of water and cook over medium heat until the chicken is tender and the gravy is thick.
Layer & Dum: Cook the Biriyani rice separately in water until done, then scoop it out. To assemble the Biriyani, create layers of the cooked rice, sprinkling a small amount of the Masalakootu Biriyani Masala on top of each layer of rice before sealing the pot for the final dum (steaming).
