Puttu Perfection: Soaking Instructions
Achieving the perfect, soft, and fluffy Puttu requires properly hydrating the flour. Follow these simple steps for best results:
Step 1: Moisten the Puttu Flour
Take the required amount of puttu powder (rice flour or millet flour) in a large mixing bowl.
Add salt to taste and mix well.
Slowly sprinkle lukewarm water (or milk) over the flour. Use a light hand—it's essential not to add too much at once.
Gently mix and rub the flour between your fingers, ensuring the water is evenly distributed. The flour should become moist and crumbly, resembling wet sand. It should hold its shape when pressed lightly but break apart easily.
Step 2: The Essential Soak
Once the flour is evenly moistened, cover the bowl with a lid or a clean cloth.
Let the moistened puttu powder rest and soak for a minimum of 20 minutes.
Why soak for 20 minutes? This resting time allows the flour particles to fully absorb the moisture deep within, ensuring that the final puttu is not dense or dry, but light, soft, and easy to steam.
Step 3: Check and Steam
After 20 minutes, check the consistency. If any dry lumps have formed, gently break them apart.
Fill your puttu maker (Puttu Kutti) by layering the moist flour with grated coconut.
Steam until the characteristic fragrant steam escapes from the top hole (usually 5-7 minutes).
Serve the perfect, soft Puttu immediately!
