Preparation Steps:

Prepare the Slurry: In a heavy-bottomed pan or saucepan (with the stove off), add the ragi flour and about 1/2 cup of the water. Whisk thoroughly to create a smooth, lump-free paste (slurry).

Add Remaining Liquid: Pour in the remaining water (and/or milk, if using it in this stage). Mix well.

Cook and Thicken: Turn the stove on to a low or medium-low flame. Stir continuously as the mixture heats up. This continuous stirring is crucial to prevent lumps.

Achieve Consistency: Continue cooking for about 3 to 5 minutes. The mixture will transition from thin and watery to a thick, glossy, and smooth consistency. This indicates the ragi is cooked.

Sweeten and Flavor: Turn off the heat. Stir in the jaggery powder (or other sweetener).Mix until the sweetener is completely dissolved.

Serve: Serve the ragi porridge hot or warm.
