🛒 Ingredients Required:
Chicken: 1 kg (curry cut is ideal)
Onions: 250-300 gm (sliced lengthwise)
Tomatoes: 1 medium tomato (sliced/chopped)
Oil: 2 tablespoons coconut oil (or cooking oil of your choice)
Spice Mix: 4 tablespoons (45gm) of Special Chicken Masala
Liquids: 1 glass of water
Fresh Aromatics: Curry leaves
Seasoning: Salt, as needed


👩🍳 Cooking Instructions:
Sauté Onions: Heat 2 tablespoons of coconut oil in a pan (or pot). Add the 250-300 gm of sliced onions and salt as needed, and sauté until the onions soften and turn translucent.
Add Aromatics: When the onions are soft, add one chopped tomato and curry leaves, and continue to sauté until the tomatoes break down.
Bloom the Spices: Once everything is well-sautéed, add 4 tablespoons (45gm) of the Spices Chicken Masala and fry (roast) briefly until fragrant.
Cook Chicken: Add 1 kg of chicken to the pan and mix well with the masala base.
Simmer: Add one glass of water and cook (simmer) until the chicken is tender and the curry reaches your desired consistency.
Serve hot with rice, chapati, or appam!
