Ingredients Needed (Not in the mix):
1 kg chicken (curry cut)
1 carrot, diced
2 potatoes, diced
50 gm cashew nuts
8 tbsp grated coconut
800 ml total water (plus extra for grinding/adjusting)
1 tbsp coconut oil
Salt (to taste)
Curry leaves (for garnish)
Fresh cream (for garnish and consistency)
Simple Instructions:
Cook: Mix chicken, carrot, potato, Masalakootu Chicken Stew Mix, 350 \text{ ml} water, and coconut oil in a kadai. Cook covered on low-medium flame until chicken is half-cooked.
Grind: Soak cashew nuts in 100 \text{ ml} water, then grind with grated coconut into a fine paste.
Mix: Add the paste and another 350 \text{ ml} water to the chicken mixture. Cook until done.
Finish: Garnish with curry leaves and fresh cream. Adjust the gravy consistency as desired.
