Cooking Guide: Masala Koottu Kappa Biryani

Enjoy a taste of Kerala with this easy-to-follow guide for preparing authentic Kappa Biryani (Tapioca and Meat mix) using the Masala Koottu instant mix.
Ingredients Needed
1.5 kg Tapioca (cut into small square pieces)
1 kg Buffalo Meat (preferably with some bone and fat)
1 packet Masala Koottu Kappa Biryani Masala
1 cup Grated Coconut
Water and Salt (as required)
Preparation Steps
Step 1: Prep the Tapioca
Cook the tapioca pieces in a pot with enough water and salt until tender.
Strain the water completely and set the cooked tapioca aside.
Step 2: Pressure Cook the Meat
In a pressure cooker, add 1 kg buffalo meat, the Masala Koottu masala, salt, and 350 ml water.
Mix well and close the lid.
High Flame: Cook until the first whistle.
Simmer: Reduce heat and cook for 3 more whistles.
Turn off the heat and wait for the pressure to settle naturally.
Step 3: Prepare the Coconut Base
While the meat is cooking, take 1 cup grated coconut and a little water.
Crush it lightly in a mixer (do not grind to a fine paste).
Step 4: Combine and Finish
Open the cooker and add the cooked tapioca, crushed coconut, and 250 ml water.
Mix everything thoroughly. Taste and add salt if needed.
Cover the cooker with a lid and cook for 5 more minutes (Note: without the weight/whistle). Do not pressure cook at this stage.
Remove from the stove and give it a final, vigorous mix using a wooden spoon or spatula.
Serving Suggestion
Serve steaming hot! This dish is a complete meal on its own, often enjoyed with a side of spicy red fish curry or simple onion salad.
